Well it wsn't my first choice for a veggie. I've changed my mind. I love them now, but if I'm cooking them my husband wants to throw me outside and told me to cook them out there. He won't eat any veggies at all. I could live on them.<br /><br />I like to cook them in olive oil in my iron frying pan with chopped onion and garlic. I slice them and sautee for about 15 minutes and then drizzle with balsamic vinegar. It's a great treat. They aren't as smelly if you cook them whole in the oven on a cookie sheet. Drizzle with olive oil, balsamic vinegar and sprinkle with garlic powder and bake. Very tasty.
